Pickled Mussel Salad with Avocado
Ingredients:
- 2 cans of pickled mussels.
- 1 avocado.
- 1 jar of sun-dried tomatoes in oil.
- 1 red onion.
- Lemon juice.
- Cilantro.
- Salt and pepper.
Preparation:
- Open the cans of pickled mussels and drain, reserving the marinade to use as a dressing for our salad.
- Peel the avocados and dice them. Finely chop the red onion and add it to the avocado. Chop the sun-dried tomatoes and add them to the previous mixture. Add a splash of lemon juice and season lightly with salt and pepper. Stir and gradually add the reserved marinade, just enough to dress the salad without making it too watery. Finish by chopping the cilantro and mixing it well with the salad.
Plating:
In a bowl, place the avocado salad as a base, and top with the whole pieces of pickled mussels.
