Garfish Toast with leek and cecina powder

Ingredients:

1 Can of spinach in olive oil
2 slices of bread
4 leeks, white part
2 slices of cured meat
Flaky salt

Preparation:

  1. Open the can of spinach and separate the oil from the spinach.
  2. Scald the leeks. Add the previously washed leeks from the boiling water. When it comes back to a boil, remove and cool in ice water to prevent further cooking. Cut in half and set aside.
  3. Cut the bread slices in half and toast, using the oil from the can to give the bread a golden hue. Set aside.
  4. In the microwave, heat the slices of cured meat on full power for 2 minutes. Remove and let cool.
  5. Once cool, grind into powder using a mortar and pestle. In a frying pan, brush with oil from the can and roast the leeks until soft and golden.

Plating:

Place the toasted bread on a slate board, arrange the leek, seasoned with a few flakes of salt, and top with the spear. Finish by decorating with the dried beef powder.
