Garfish Toast with leek and cecina powder
Ingredients:
1 Can of spinach in olive oil
2 slices of bread
4 leeks, white part
2 slices of cured meat
Flaky salt
Preparation:
- Open the can of spinach and separate the oil from the spinach.
- Scald the leeks. Add the previously washed leeks from the boiling water. When it comes back to a boil, remove and cool in ice water to prevent further cooking. Cut in half and set aside.
- Cut the bread slices in half and toast, using the oil from the can to give the bread a golden hue. Set aside.
- In the microwave, heat the slices of cured meat on full power for 2 minutes. Remove and let cool.
- Once cool, grind into powder using a mortar and pestle. In a frying pan, brush with oil from the can and roast the leeks until soft and golden.
Plating:
Place the toasted bread on a slate board, arrange the leek, seasoned with a few flakes of salt, and top with the spear. Finish by decorating with the dried beef powder.
