Fried mussels with mayonnaise from their spicy marinade

Ingredients:

  • 2 cans of mussels in spicy marinade.
  • Flour.
  • Egg.
  • Mayonnaise.
  • Lettuce leaves.

Preparation:

  1. Open the cans of mussels and separate the mussel pieces on one side and the spicy marinade on the other.
  2. In a bowl, place the mayonnaise, to which we will add the reserved marinade. The amount of marinade to add will depend on each person’s taste. If the sauce is too runny, add more mayonnaise. Beat two eggs and place a bowl of wheat flour in a saucepan with plenty of sunflower oil. Add the mussels to the batter and fry them in small batches to avoid overcooking them. As we remove the mussels, place them on absorbent paper to remove excess fat. Plating:
  3. Fill the can of mussels with lettuce, and top with the mussels, without piling them up. Place the can on a platter that we’ve previously brushed with a line of spicy pickled mayonnaise.
