Preparation
- Temper the bonito belly slices in their own oil and then temper the mussels in their own marinade.
- Next, we will assemble the dish, alternating the bonito and mussels in a millefeuille style, placing the bouquet of lettuce and fruit next to it to add a fresh touch.
- Finally, we will add the pil-pil marinade to which the essence of the pickled mussels has been previously added.
