  • Ramón Franco Pickled Mussels
  • Escarole and Oak Leaf
  • Fruits such as mango, strawberry, kiwi, etc.
  • Pil-Pil Marinated Mussels

Preparation

  1. Temper the bonito belly slices in their own oil and then temper the mussels in their own marinade.
  2. Next, we will assemble the dish, alternating the bonito and mussels in a millefeuille style, placing the bouquet of lettuce and fruit next to it to add a fresh touch.
  3. Finally, we will add the pil-pil marinade to which the essence of the pickled mussels has been previously added.
