Pickled mussels

Only the finest mussels (Mytilus galloprovincialis), grown in the nurseries owned by these canners, are used to make the house’s delicacies.

In the cold waters, the mussels cling to the ropes hanging from the rafts. From land, their slow growth is patiently monitored, resulting in excellent specimens over two years.

Their growth is monitored daily, and from the sea to the cannery, the origin of each piece is known with certainty. Between the months of July and February, the mussels are in optimal condition. One morning, everything gets underway, and the house’s two boats head for the rafts.

From the ropes to the boat, and from the boat to the workshop, the freshest mussels are ready to give their best.

Delicacy: They are washed, steamed, and the beards are removed by hand, with extreme delicacy, so as not to damage the food.

Fry them in good oil, place them one by one in the can, and add the marinade.

At the end of the day, they are sterilized and allowed to rest. Time will now finish giving the mussels their flavor.
